(Notes for vintage 2021)
Hazy, golden yellow color with a dense texture.
Its refined and rich bouquet reveals ripe yellow apple, persimmon, kiwi, and candied pineapple. Perceptions of lemon zest, honey and dry yellow flowers follow. Continued by almond, butter, vanilla, and a gentle hint of caramel. Its finish reflects rosemary and basil.
The taste is soft, with youthful freshness, a mineral signature and slightly astringent. It is an intense wine with an elegant character, full body, and lasting persistence. The palate confirms flavors of herbs, followed by ripe and candied fruit.
It will pair well with complex haut-cuisine dishes with various purees or creamy sauces. Also with poultry, pheasant - especially with crispy fried skin and with lamb shanks or pork ribs. If looking into vegan dishes, this is the perfect combination for dishes accentuating umami, especially based on carrot or cauliflower.
